The fall weather is upon us and I personally feel it’s easier to plan meals when it’s not hot. I find myself coming up with a greater selection of food from hearty to light meals. I’ll begin by saying I won’t be giving measurements for the ingredients as I feel if you’ve been cooking for awhile you got this! You just have to increase portions of ingredients to fit your family’s needs.
Monday
Chicken 🍗 and Rice 🍚 bowl plus vegis.
🌽 corn canned rinsed
🫘 black beans canned rinsed
🍅 Tomato fresh chopped in cubes
🧅 onion chopped in any way you like
🧀 cheese “old” variety sprinkled on top grated
🍚 cooked ahead of time and cooked
How to put together?
Take a cereal bowl, put rice at bottom of bowl enough to cover bottom.
Then imagine bowl split into quarters, put the ingredients enough to take up 1/4, so tomatoes take up only 1/4 of space and so on.
Then sprinkle cheese lightly on top.

Frozen fish burgers (store bought) with frozen French fries
Wednesday
Beef stew with chunky vegis
I use inside round roast, I buy a larger cut and divide up and freeze for later. I simply use carrots, celery and maybe throw in a potatoe or two. I cut the vegis the thickness of a Cheeto chip and the length like an Indian style chicken in a curry but ultimately it’s up to you. For the herbs I use gravy powder, basil, garlic(fresh), and chicken cube.
Thursday
Takeout meal- bourbon street grill
My favorite is orange chicken, zucchini and my husband loves the mustard chicken, broccoli and bourbon flavor. We both choose rice.
Friday
Spaghetti with meat sauce
-measure enough pasta for family, I just eye ball it but I learned you can buy a tool that helps. I use lean ground beef and canteli or western family mushroom
